The calendula petals have been used traditionally as culinary and medicinal herbs. Only the petals are edible and are often used in tea, salads, to color cheese and as a substitute for saffron.

• Directions: To prepare as a tea, pour 8 oz. boiling water over 2 tsp. of herbs. Cover and steep 5 - 10 minutes, strain and serve immediately.
